The first question to ask about a cezve is not how many millilitres it holds but how many cups. A Turkish coffee cup takes 60 to 70 ml, and pot sizes are named after how many of those cups come out of them. Nobody walks into the workshop asking for a three hundred millilitre pot; they ask whether we have a four cup one.
Volume against cup count
- 1 cup: 90-120 ml
- 2 cups: 150-200 ml
- 3 to 4 cups: 250-350 ml
- 6 cups: 450-500 ml
Multiply it out and the arithmetic does not match. Four cups is 4 x 70, so 280 ml, yet a four cup cezve measures 300 to 350. The reason is straightforward: a cezve is never filled to the rim. The foam needs room to climb, so roughly the top third is left empty. Ignore that allowance and the coffee goes over the side on its first rise, and the foam leaves with it.
What belongs in a home kitchen
For a household of two, a 2 cup pot covers the morning and asks for nothing else. Homes that see guests keep a second pot, either 4 or 6 cups. If you want to manage with a single cezve, buy the 4 cup size; two cups of coffee cook in it perfectly well.
That flexibility has a limit. Try to brew one cup in a 6 cup pot and the liquid spreads thin across a wide base, the rising surface grows, and the foam finds nothing to hold on to. You get coffee, but no crema.
Rim width
The same volume can be built in two shapes. A pot with a full belly and a narrow mouth traps the foam inside; the rise is slow and you have time to lift it off the flame. A pot whose opening is nearly as wide as its body looks handsome, then spills over the edge when the coffee sits two seconds too long. On a four cup cezve, keep the mouth under 7 to 8 cm.
The handle
Handle length decides how close your hand comes to the flame; on a short handled pot a gas burner licks your fingers. The material matters more. Brass does not take up heat as fast as copper, so it stays holdable while the coffee cooks. A handle drawn from copper heats at the same rate as the body, and you will need a cloth. Wooden handles work loose at the screw over time; tightening once a year is enough.
Wall thickness
The right thickness for a cezve is 1 to 1.2 mm. Thin sheet passes the flame straight through the base, the sugar sticks and scorches, and that burnt note runs through the whole cup. A 0.7 mm pot feels light in the hand and costs little, and you will watch its base darken within the first months.
Lining and hob
Coffee is not an acidic drink, but long contact with bare copper is still unwanted, so the inside of a cezve should be tinned. Tin dulling over the years is not a fault. Scrub it with polish and you take the thin layer off, and after that it is a trip to the tinsmith.
Copper does not work on induction. It is not magnetic, so the hob never registers the pot and the display stays blank. A steel induction disc underneath will let you brew, though heat now arrives through the disc and you lose some control. On gas, small pots also fail to sit properly between the trivet bars; a fine wire cezve adapter solves it.
Working out the size of a pot you already have
Fill a coffee cup with water, empty it into the cezve, and count how many it takes. One less than the number that fills it to the rim is the pot's real cup rating.
